Eeek! It has been more than a week

I apologize, friends, for not blogging more often right now. Truth be told, I've been having some internal issues, and I've 1) not been cooking and 2) not been eating well.

Ok, not tonight. Tonight I'm having a pan-roasted steak and some leftover GF blooming onion that I froze.

But, last night, I had some canned fruit cocktail and some fresh grapes with my GF chicken Vienna Sausages (I know). The night before, I had popcorn and some GF McDonald's fries. And Sunday, I ate popcorn while watching the Emmy awards. Saturday night, after great GF meals at the Connect 2008 conference in Athens, I ate boiled peanuts and Cheetos for dinner.

See what I mean? Had I not gone to Connect, well, I would have subsisted on pork rinds last weekend. I'm sure of it.

I don't know what the problem is with me, but I just don't have much gumption to cook. I'm entirely stressed at work, and I've been on the road a lot. I'm not cooking, and I'm not eating out. I'm just junkin' it up.

I am maintaining my 100 percent GF status, though, and that is what is important. I still rarely eat sugar, and I'm still limiting the other allergen-producing foods.

So I ask you, GF friends. What do you do when this happens to you?

Hmm I was positive that McDonald's Fries had wheat on them and were cooked in the same oil as wheat stuff, but you never know.

When I really don't care about food, I just want to eat, I eat fruit and veggies. It may be silly, but it's one of my favorite things. Oh, and if I need a meal, I eat a frozen Glutino Mac and Cheese, or a frozen Amy's Shepards Pie. Or make a easy pizza with a kinnickinnick crust. Just simple stuff.

I'm in the same boat right now. Ever since getting my list of new foods I have to avoid, I've had no desire to cook. I'm hoping to come out of it soon!

You poor thing! Hope you are feeling better soon... When I don't feel like cooking, I turn to my gluten free comfort foods - nachos and g.f. cereal. Well, not in the same meal - that would be sorta nasty.

beans, beans, more beans. hot or cold. spiced up with any GF sauce or ingredient you can find. and some lettuce in a bag.
and the salad bar at our "Whole Foods wannabe market". They've got lots of bean salads and wonderful fresh veggies. And cheese from the deli.AND they sell gluten free brownies.
I've pretty much did that all summer! Today I bought a cast iron covered pot....this signals my return to the kitchen for fall.

Maybe I'll make beans...

I spend about half a day cooking for the week. I pick a time when there's something good on tv. Then I fill up the oven with a chicken, a loaf of bread, a small pizza crust, about $4 worth of pork loin and a fruit cobbler with minimal crispy topping. I cook a pot of green beans and potatoes, or saute one of my ridiculously large Italian squashes. Sometimes I make a bag of salad mix.

Then I've got good meals to microwave and I'm not tempted to eat junk.

Since I stopped eating junk food, I really don't crave it. I was really surprised! I expected to be in mourning for breaded tenderloin sandwiches and Bazbeaux pizza for the rest of my life.

If you lived down the street I would gladly bring you a covered dish. When I win the lottery, I'm building a gluten free farmhouse surrounded by acres and acres of organic produce. You can visit any time! Apple season would be a good time to visit. I'll barter organic produce for free range chickens and healthy meat. Maybe I'll figure out how to ship emergency care packages.

I'm often too busy/tired to cook during the week. I try to stock quick, easy convenience foods in the freezer - Tater Tots, Bell and Evans chicken, Ian's fish sticks, Amy's pizza, etc. that I can whip out for an easy meal. Also, I buy the Kraft Mac and Cheese powder in bulk (always good with Tinkyada pasta), store frozen dinners for a quick lunch if we're on the go, and have about three different sushi restaurants programmed into my cellphone. :) Boston Market is an OK option if you're in a pinch as well.

Then I try to compensate on the weekends and the rest of the week by eating nothing but fish and veggies. :)
